up and running

i seriously need to do something to my blog. it has been almost a year since updated. Seriously time does fly. It felt i was yesterday that I last updated. Well, a lot of things went by, from happy to sadness, angry to forgiving. Firstly i need to wish, whilst I still can, Selamat Hari Raya Aidilfitri. I am preparing Middle Eastern Cuisine on the 28th of September, and seriously, I am going to post it up here.

Cooking

I actually got lots to share, lots to tell. My last post was in September, and that waasss aggeesss agooo. Apologies, that was my busy time because of my studies. And i think i got heaps to catch up. Actually, my genius friend, Sarah Iliana, the famous person in Assunta PJ, ( LOL, tibe2 tertulis :p ) who reminded that i should update my blog. And so here i am, writing a piece.

I just want to share with you all. Do you guys love cooking? Well, if you don't, you should start, from your heart. Cooking should be something to enjoy. It teaches you to care, pay attention to details, and the most important point, that it lets out your creativity, in my opinion it does. And the reward, is satisfaction, and you can't buy that. Satisfaction that comes from when you see that your food is enjoyable by many, is like sex or a drug. That feeling, that once you taste it, you feel WOAHHHH.This is orgasmic. Lol. 

Well, what i have been doing in my holidays, is experimenting with foods. And i found quite a lot. I became a fan of Basils, or Daun Selasih. If you add it to a sambal dish, it gives this aromatic and add of depth in flavor. And the other day, my dad plucked out sweet potatoes and gave me them. And i tried experimenting, that if you blend the potatoes with udangkering, and some other stuffs, and i turned it into a soup. I know, udang kering and them sweet potatoes are the basic ingredients to make mee bandung. But, i don't care, i made a soup, with no recipes or what ever. 

That's it for me, i'll be thinking of what recipes to post after this. Do tell me if you tried it, or you have a problem. Or you want to ask for recipes.

ayam salai masak lemak cili api la dei



haha. kamu semua tgk gmba ni. ini lah gmba aku ketika aku pakai baju chef yg paling chun kot. :)


ketika ini aku tgh mensalaikan ayam utk aku masuk dlm masak lemak cili api aku. senang je nk masak. jgn risau. org tk pernah masak sblm ni pun bole msk.

okay sekarang aku nk bebel psl ayam salai masak lemak cili api yg chun pnya. :D




mise-en-place for ayam salai. err kalau aku igt la.

1. bawang putih, 5 ketul
2. shallots atau bawang merah, 5 biji
3. halia, 2cm
4. serai, 3-4 biji,
potong hiris
5. lemon juice
6. serbuk cili/cili boh (make sure jgn pedas sgt)


utk masak lemak cili api:

1. kunyit, 2 sudu
2. cili api, 1 mangkuk
3. cili merah dn hijau, 1 mangkuk
4. santan,
1000ml
5. bawang putih/merah, dlm 5 biji each.
6. air dr kiub pati ayam, 1 ketul pati ayam da cukup.
7. serai, 5-6 biji dititik
8. kentang, dipo
tong quartered.




methods for ayam salai:

1. blend semua bwg, cili, lemon juice, dgn serai, halia. dan marinade ayam tu. at least sejam.

2. bila agak2 korg da bosan tunggu, salai kan la ayam tu. terpulang utk korg nk buat mcm mana. aku salai atas kuali yg sgt panas, dgn minyak skit dn salai smpai air dlm ayam tu kurang skit, and ada kalau hitam (kesan bakar).

3. salai bg nmpk colour. tkyh masak sgt sbb nnt korg akan masukkan kedalm msak lemak and nnti ayam korg jd overcooked, equals to, tk sedap. so bg mcm dlm 3/4 masak.

4. da siap semua, tolak tepi.





Methods to masak lemak cili api:

1. kuali panas, br masukkan minyak. minyak bg byk skit pun tkpe. masa ni, blend cili api tu dgn bwg2 tu and tumis hasil blend ni.

2. da naik bau, baru masukkan dlm 200ml santan cair dn kacau skit.

3. masukkan kunyit smpai warna kuning bila cmpur dgn santan cair td. masukkan serai yg kena titik td.

4. masukkan air kosong atau stok ayam kalau nk. agak2 korg la byk mana nk letak. nk cmpur dua2 pun bole. then, masa ni adjust the colour. tmbh kunyit jika perlu. sekarang la nk masukkan cili merah, hijau, dn kentang

5. biar smpai mendidih, baru masukkan santan pekat. make sure letak smpai colour nmpk mcm masak lemak. warna KUNING! tmbh kunyit jika perlu. adjust. masukkan garam ikut rasa. gula jika perlu.

6. agak2 da kentang da lembut, baru masukkan ayam salai td kacau sedikit sahja. kita tknk isi ayam tu pecah2 kan?

7. ayam salai masak lemak cili api, SIAP.





ni la hasil masak lemak cili api aku. sori sbb aku present dlm bowl besi. cuma masa tu aku mlas nk present cantik. aku buat pun cincai boncai je. hehe. :)

mental sewel, pergilah exercise.

tadi pukul 11, aku bermain futsal setelah, sebulan lebih tk main, tk exercise apa pun. kalau kat penang ni, aku masak, makan, gi kelas, tidoq. tu je la exercise aku. so aku nk la berpeluh dn jd sihat skit. da la aku ni perokok(YA aku mmg perokok!). and aku nk kasi jantung ni kuat skit so, pergilah main futsal dgn aminuddin dn kwn2 nya.

td, aku rasa aku main okay td, tk mcm cech, sbb half way peha aku start jamming in the middle of the game. so sbg keeper aku jd malas la nk dive. dlm 3 goal aku biar masuk sbb aku tk larat nk dive. tp skang da okay la. peha da okay. ladies, i am okaayyyy hehehe :p

direct to the point, aku da jd unfit asyik bersuka-ria menjerit2 dlm kitchen je. :S kepada sesiapa yg rasa dia tu unfit atau gemuk, la ni pi exercise la. skang da byk org complain dia gemuk la, gelebeh sini , gelebeh sana, perut boncet. tu la aku perasan dikalangan kaum melayu. sikit tk kena complain, tp tknk buat apa2 about it. aku tkda la ckp aku ni perfect, at least aku bangga dgn my weight sbb i deserve it. and pleaaaaseee laaa jgn makan sekali sehari and mkn salad ke apa dgn alasan "diet". baik korg sahur, pergi puasa ganti yg dlu2 tk byr balik tu. at least dpt pahala. nk makan biar la healthy, dnt be choosy. haihhh. ni lg satu masalah budak2. nk kurus senang je, makan seimbang dan;


PERGILAH EXERCISE WOIIIII!



jgn complain2. masalahnya kesanggupan mental. kalau malas, terima je la. duduk complain2 kt kawan sebelah, "eh you, i da gemuk la. sebulan ni tk mkn nasi la". BODO tu namanya.


DO SOMETHING ABOUT IT. jangan bilang saja. change ourselves to be better. :)

creme caramel

since ramai org mentioned kat saya yg dorg suka melahap creme caramel, so im going to list down and explain how to make the best creme caramel :)
sebenarnya tk susah buat creme caramel ni. a little bit of effort and attention je is all it needed. tgk la nnti, after i explain kat korg ni, mesti korg mcm, "eh tu je? pfftt senang jeee".


Okay, before korang nk buat creme caramel ni. make sure you all dah sediakan mouldings. ala tkyh besar2 sgt. masak besar nnti bila nk keluarkan dr bekas, pudding you senang pecah. so kita masak dlm portion atau bekas yg kecik je.
ok ladies and gentlemen, kita akan masak creme caramel ni gunakan water bath technique.this requires us to bake the creme caramel in a small bekas that would fit into another bekas, and fill the bigger bekas with water. just like the picture shown below :

So, mise-en place for the creme caramel pudding are:
1. castor sugar A, 120g
2. castor sugar B, 120g
3. fresh milk, 250ml
4. egg, 3 numbers.
5. water, 2 tablespoon.
6. whisk
*this amount are for roughly 4-5 person. if korang nak buat twice as much, simply times all of the ingredients by 2. simple maths kan?
Preparations:
1. asingkan sugar A dgn B.
2. masukkan sugar A dlm periuk dn panasskan gula. idea nya skang, kita nak caramelized the sugar, atau buat gula hangus. make sure you kacau gula ni, kalau tk dia berkerak nnt. kacau until gula tu start to melt, and colour dia nk jd brown. AT THIS POINT, make sure jgn sentuh periuk tu sbb SUGAR CARAMELIZES AT 160C okay? so sebaik saja gula tu nk jd brownish in colour, masukkan air 1 tablespoon at a time and make sure gula tu cair, tp not too cair. then, set aside.
3. then, in another bowl. whisk the eggs until the eggs become frothy. pour in the milk and continue whisking until completely mixed. add in the sugar B and keep whisking. add a bit of vanilla essence and whisk until mixed.
4. now, i am giving you A TIP that many people yg bole masak creme caramel ni often overlooked; and that is to STRAIN the mixture. this will give you a fine and clean texture of pudding. then, when you are pouring the mixture into the small bekas like i mentioned above, use a penapis.
5. after you finished pouring. then get the bekas filled with the mixture and put it in the bigger bekas. and in the bigger bekas, fill it with water, about half. TIP, make sure before masukkan dlm oven, korg REMOVE every air bubbles on top of your mixture. put it in your oven.
6. bake it 180C for 25-30 minutes. check often. the end texture should be of a pudding. and take out when done. leave it until dia sejuk.
7. now, for the garnishing, bila da siap masak creme caramel, get a plate (depending the size yg korg buat). terlangkupkan the caramel on the plate. make sure since the caramel is very fragile. now get back to the sugar A you made earlier. panaskan jika perlu, and pour the caramelized sugar on top of your caramel pudding.
8. creme caramel, DONE.
* for extra kesedapan, you can put a scoop of icecream and put it on top of your creme caramel. OR you can eat with fresh fruits. i.e. strawberrys, kiwis, and etc. :)

kari kepala ikan.

haa since ni resipi yg fresh dlm kepala otak aku. aku masak kari kepala ikan tnpa guidance chef aku, bernama Chef Raja, dlm kitchen ASIAN, 1 september lepas, dn jadi kooottt. :D aku buka puasa dgn senyuman yg amat lebar la.

senang je nk buat kari kepala ikan atau seperti kari2 lain. bezanya apa yg korg masak la kan? kari ikan ke, kari ayam ke, kari gajah ke, "base" dia tetap sama. KARI.

so mcm mana nk buat kari. aku nk bgtau se-simple yg bole.

JAP. aku tkle nk kasi exact measurement. so korg kena pandai agak byk mana bahan nk pakai, utk brape byk nk masak. so self-confidence kena tinggi okay? apa2 tnya la aku so aku bole assists skit2.


okay. mise-en-place for kari ikan kepala ikan.

1. 4-sekawan: buah pelaga, kulit kayu manis, bunga cengkih dn lawang. cukup la satu piring semua ni.
2. minyak. sediakan agak byk.
3. daun kari.
4. biji sawi
5. serbuk kari ikan. sediakan byk mana nk pkai la.
6. air, again, utk byk mana nk pkai.
7. santan pun sama
8. cili merah/hijau di hiris
9. bendi potong slanting
10. tomato quartered
11. ouh garlic, sliced, and onion sliced. nk pkai shallots pun bole.
12. and seasoning, salt and pepper.
13. Ikan , atau kepala ikan.



okay. jom masak kari!


1. pnskan minyak. letak byk skit pun tkpe. tumis atau saute* 4-sekawan, biji sawi, dn daun kari tu smpai aroma keluar. then, masukkan onions and garlics tu. smpai naik aroma.

2. serbuk kari tu, dlm bowl, cmpur kan dgn air skit. biar pekat. dn masukkan kedalam periuk td. kalau agak2 kari tu mcm nk berkerak, tmbh minyak. dn kacau. smpai kari tu pecah minyak atau kalau korg malas, terus masukkan air. bagilah ratio air dgn kari tu sama. TIP! bagi colour kari tu nmpk normal, dn korg rasa la kari tu, ada kehangatan atau tidak. masa ni kena pndai agak skit. heheh ;p

3. korg season la. garam and pepper secukup rasa. masukkan bendi, tomato, cili merah/hijau. dn biar didih.

4. dlm bowl lain, kalau santan tu pekat, cmpur air skit. santan cair tkpe la. kemudian perlahan kan api dn masukkan santan. make sure api kecik kalau tk nnti berkeladak. tmbh minyak skit at this point. dn kacau perlahan smpai kari tu nmpk cantik dn normal di mata korg.

5. lastly bila da okay, masukkan ikan atau kepala ikan. TIPS! at this point. jgn kacau dah. tgn jgn menggatal. biar smpai ikan tu masak. sbb isi ikan lembut, kalau kacau, nnti isi ikan pecah. tk cantik la kari korg kan nnti?

6. kari kepala ikan, SIAP. :)
